A bit of poking around on the net (I *am* working honest!) shows:
http://www.colorserver.net/showcolor.asp?fs=36231+36270 the darker
FS36231 is "typical post WWII US cockpit colour", while the lighter
FS36270 is "some F-16 cockpits" and is the same as USN "Haze Grey" which
is the colour they paint surface vessels....
So far I'm liking the lighter grey ;-)

I have photos, and you can use sites like
http://scalemodeldb.com/paint to get matches, but photos (digital or
otherwise) are not terribly accurate for colour matching.... I found a
site which listed the colours used in F-16's once.. but it looked really
dark compared to the old A-4... may be a Navy vs Air Force thing?
Wonder if I can find some USN Paint docs..... hmmm

If you have a digital photo of the cockpit..
You could (with a copy of the original, don't mess up the original)
Open that photo in say MS paint (or whatever), use the color select tool
to select the color from the cockpit your trying to get.
Make a big shape (square or whatever) of that color, print it out
then take it to a paint supplier (local, HD. Lowes, ACE, Best, whatever)
and have them crank out a gallon from that paint chip.
retrying got errors last time I sent this one out.

I don't know that there is one that covers _all_ aircraft. There would
likely be service-specific requirements too.
