How about using a projector instead of a flatpanel?
It would project the instruments onto the rear of the instruments, which would have a semi-transparent window.
 
It must be able to draw a mirror image, but that could be a function of the software, the projector or just an actual mirror.
 
With the projector well away from the panel and the panel being just a thin piece of plastic you would have enough space for things like yoke mechanics, switches, etc.
 
A drawback would be a bigger, longer nose that is mostly empty and perhaps the costs of a projector.
