You should really check out Allegiance.  MS release the source code last
thursday (511MB download) and it's a combination of Real-Time Strategy and
first person 3D space combat.  The cool thing is that it's online
multiplayer only.  I'm sure it would be trivial to add data exports to it
so you could drive any kind of cockpit display you wanted.  The cool thing
is that you don't have to spend megabucks trying to duplicate or buy some
real aircraft parts.
