Interesting, I heard it something like this:

Murphy was involved in the acceleration tests with the "rocket sled", where 
researchers measured g loads and observed what effects this had on the human 
(Murphy, in this case). On one occasion, a tech guy installed an 
accelerometer backwards. Of course, there were only two possible ways it 
could go. Thus Murphy stated something to the effect of "if anything can go 
wrong, it will". At least that's the version I heard. :)
