I'd recommend an Arduino UNO.  The reason is that they can be had for 
about $12 a pop (search for the seller "trade_spotting" on eBay) and you 
can turn them into 8 axis, 40 button USB joysticks.

I'm using a custom built driver board in order to push 12/24 volts with 
them.
