There's nothing saying you need to leave them in the stock enclosures. I
c'mon. The FIRST step in building a cockpit is VOID THE WARRANTY. :)
They've got a really nice throttle quadrant that uses Cessna style vernier
controls. Their travel is about 3" or so. It includes throttle, mixture
and pitch as well as a pile of full sized toggle switches. It's
practically begging to be put into a different chassis. :)
