I found out yesterday that you can use the Centipede Shield in conjunction 
with the MUX Shield that SparkFun sells.  The MUX Sheild provides 48 
analog or digital inputs or digital outputs.

This means that with a standard Arduino board, you can have 128 purely 
digital I/O lines and 48 analogs on one device.  As soon as my Centipede 
Shields arrive I'll take a picture of the stack so you can see what it 
looks like.

There's a virtual joystick out there called "PPJoy" 
(http://ppjoy.blogspot.com/) that you can use to "emulate" joystick 
devices.  The machine will think it's talking to a standard joystick. 
This is what JoyMapper uses 
(http://www.assembla.com/wiki/show/lightningstools) for interfacing PHCC 
hardware.  Because the author was kind enough to create a .Net version of 
the PPJoy SDK, it will be fairly easy to interface the serial protocol I 
use with the Arduino with any simulator.

If there is enough interest in this kind of thing, I'd be happy to create 
a simpits-arduino list.
