Not too familiar with chopper sims, but Enemy Engaged:Commanche vs. Hokum
has the ability to fly any chopper, and the latest update added the AH-1Z
Viper. I also know it has data extraction capabilities, though I don't
know how extensive.

Check out http://www.eechcentral.com/ for more info. I think it could
serve the sim nicely.
