 kind of like a breakout box for rs232 or parallel connectors, or you could make you own with some of the perf boards with soldering pads.

It's basically a board that has a printed layout or diagram of the wiring 
harness to be built and little pegs to hold the wire in various positions 
along the harness.  I think I have  a handle on how it's done in theory, 
but I would really like to see how it's done in the real world.
