Well, the displays are most likely large LCD's behind a pair of 
bezels, to make them look like 2 separate displays. I have seen 
737NG's done using displays from 20" (which, given the right monitor 
is exactly the right size) down to 19" and even one using 17" widescreen LCD.

As for the bezels, I think Peter Cos at Flightdeck Solutions does 
them, although they don't appear on the website ( 
www.flightdecksolutions.com ), drop Peter an email to find out :)
