I just used a couple sheets of that kerf-cut bendy MDF stuff to form the
glareshield on my EC-135 binnacle.

Just thought I'd pass on the news that this stuff is a snap to work with.

I laid one piece on with the kerf cuts uppermost, and once that was
secure, laid a second piece on top with the kerf cuts downside. The end
result is a very strong smooth panel which just needs the 'leading edge'
finishing to hide the kerfs.
