2 monitors is effectively giving me a double-sized desktop so I can run
different apps on each monitor.

To simply 'split' the signal you can buy splitters for 2, 4 and even more
monitors starting around the 40 UKP mark.

I think I've even seen a DIY solution around - maybe on simpits.org?
