Well to wire up a pot, you put a +5VDC wire on one "end" of the pot, the
ground wire for that +5VDC on the other "end" and hook the "signal" wire
to the wiper of the pot.

There are numerous examples of dealing with analog channels(that's what a
pot is - an analog device) in the EPIC docs.  There are also some basic
demo programs that come with the EPL compiler that will show you what you
want.  I can't do better that this right now since I don't have any
manuals or code handy.
