That's because steppers can't talk back (or they would be servos).
Fortunately for them, you talk enough to take up their slack ;)

1x Futaba S148 (since I have a ton of them) + 1x whatever gizmo you want
to control it + suitable programming... RC servos might not be perfect
since most can't do 360 degrees of rotation, but with the right gearing
it would work for most gauges that don't require multiple sweeps of the
needle (tach, EGT, CHT, flap pos., etc.) For HSI, altimeter, etc. it
would probably be easiest to get feedback from an encoder.

Haven't we all been through this a bazillion times?
