Yup, I'm all over that idea :)
I am trying to weasle my way into anything flying to get good clear cockpit 
photos (and not just forwards throught the screen either!) for just that 
purpose.  
I have been in contact with the RNZAF Museum about documenting the aircraft 
they have.  Be good if simpits.org became a depository of good cockpit detail 
pics.

Oh, and I *AM* now doing a DC-3/C-47 cockpit for the local Warbirds guys... 
from a real and COMPLETE C-47 cockpit section, plus all the parts I can eat..
