While doing some more research on the Mercury last night, I came across 
these guys: http://www.space1.com/

They've got some pretty cool stuff, as well as plans for a Mercury 
simulator! Some of their sims are lower-fidelity, but they've got some 
really cool stuff as well. Check out the "Hi Fidelity Exibits" section to 
see an absolutely amazing shuttle deck they've put together.
