You can change the zoom level by editting the saved flight file, but you have no way, that I have found anyway, to change the FOV that FS uses (unlike X-Plane which is easy....)

Sean, isn't there a config file you can hand edit for setting the FOV
and/or zoom level?

I found this bit on my F-15 site:

Default is 1. These settings are in panel.cfg

[Views]
VIEW_FORWARD_ZOOM=0.65
VIEW_FORWARD_LEFT_ZOOM=0.65
VIEW_FORWARD_RIGHT_ZOOM=0.65
VIEW_LEFT_ZOOM=0.65
VIEW_RIGHT_ZOOM=0.65
VIEW_REAR_LEFT_ZOOM=0.65
VIEW_REAR_RIGHT_ZOOM=0.65
VIEW_REAR_ZOOM=0.65
VIEV_UP_ZOOM=0.65

Give this a shot and let me know if it works.
