Well after much deliberation, I've opted for Leo Bodnar's USB joystick controller (the 6x6 one without encoder support). I will probably be building the USB version of PHCC when it comes out (for special inputs, servo and LCD control, my FMS, etc), but for my basic inputs and joystick controls, it really would be overkill I think. Thanks all for the advice and the heads-up on PHCC!

I've just ordered two of those board from Leo too. Looks very good and
the price is pretty nice as well!

Catching up on some emails....
I have been using Leo's basic board for a while now, and it is great! I
made up a nice (err sketchy really) diode matrix, then linked it to a
series of RJ45 connectors giving me 6 cables carrying 1 common and 6
returns for easy connections to panels :)
